Ingredients:
- 1.5 cup Ragi Dosa Mix
- 1.5 cup sparkling water or regular water
- 1 tbsp neutral-flavoured oil
- 1 tsp mustard seeds
- 1 sprig of curry leaves
- 1 medium onion, finely chopped
- 1 green chilli, chopped (optional)
- 1/2 carrot, grated
- 1 tsp grated ginger
- Salt, to taste
- 2 tbsp chopped coriander leaves
- A pinch of hing (asafoetida)
- Oil for greasing the paniyaram pan
Method:
- Prepare the Batter: In a mixing bowl, whisk together the Ragi Dosa Mix and sparkling water until it foams up. Let it sit aside.
- Tempering: Heat oil in a pan. Add mustard seeds, letting them pop, then add the curry leaves. Sauté onions (and chilli if using) for a minute, followed by the grated carrot and ginger with a pinch of salt, cooking for another minute.
- Mixing: Sprinkle coriander and hing over the cooked mixture. Mix well, let it cool slightly, then fold into the batter.
- Cooking Paniyarams: Heat the paniyaram pan, adding a little oil to each mold. Pour a spoonful of batter into each, cooking until the outside is crispy.
- Serving: Enjoy these fluffy paniyarams hot with your favorite chutney – we recommend tomato for a tangy twist!
